Peanut Butter + Chocolate

One of the most popular dessert flavor combinations. Peanut butter and chocolate. What's something that puts these together better than anything else? PEANUT BUTTER CUPS! Reese's gets it right every time. Even though I really like them, I don't always like buying them, especially when it's really hot, because the bottom sticks to the wrapper and it peels the chocolate off... no bueno. 

There had to be an easy way to make these yummy little things at home. And of course, there is! I also live with a crazed peanut butter fan so it doesn't hurt that I have my own live in tester to help me out with flavor balancing! Doing some research, there are many ways people make these, but it basically comes down to the same ol thing- peanut butter, salt, sugar, and chocolate. Ain't nothing bad about those words. You can also make these in the classic fluted cups or you could even make little blobs. I chose cups, they are cuter!

-1/2 cup peanut butter(Creamy is best, but if you're a crunchy person, go for it.)
-2 tbs butter, softened
-Pinch of salt
-1/2 cup powdered sugar
-8oz semi sweet chocolate(Try and find the bars and not the chips.)

1. In a microwave safe bowl, roughly mix the peanut butter and butter.
2. Heat the mixture in 20 second intervals, stirring in between. You aren't looking for a really thin soup consistency, maybe like a thick soup.. a stoup as Rachel Ray would word it. 
3. Mix in the salt and powdered sugar. You can chose to sift the sugar for a smoother mixture, it's up to you!
4. In another microwave safe bowl break up the chocolate into smaler pieces. 
5. Repeat step two, this time you do want the chocolate quite thin and soupy. 
6. Get your cups ready! You can choose to make larger cups or mini. I went mini since I usually have to make a number of them for many different people. Just place the cups in a single layer on a sheet pan for easy transportation. 
7. Place about a teaspoon of the melted chocolate in the bottom of the cups or just enough to cover the bottom. *Just be aware of the amount of cups you want to make so you don't end up with too much chocolate or peanut butter left over.* If you want to get fancy with it, push the chocolate up the sides of the cups so that the peanut butter layer isn't visible.
8. Once the cups are done, pop the pan into the freezer for about 10 minutes so the chocolate can set. 
9. When the chocolate has set, place the peanut butter mixture into each cup. Fill those babies up!
10. Top the cup off with enough melted chocolate to cover the peanut butter. 
11. At this point you can now pop the pan back into the freezer for another 10-15 minutes to fully set up. * Now, I like salt. I especially like salt on the chocolate. I have some really great sea salt, soooo I sprinkled a little on top of the wet chocolate. This seriously takes it to another level, but if you aren't into it, you can have your cups the regular way! The beauty of making these yourself. 

Suggestion- take these out of the fridge or freezer a few minutes before eating. Unless you like them harder and on the colder side, the peanut butter may ooze out through. But, if you're making minis.. they are bite sized so it probably won't even matter. Either way, they are really yummy! And super easy to make and they make a lasting impression! My sister asks me to make these at least once a week : ).
